Whenever I’m pressed for time, yet have to whip up a meal for the family I’d think of the easiest and fastest way to prep one. Fortunately for me, my children aren’t picky eaters and I don’t really have to wreck my brain to prepare something to suit their fancy.
I love chowders and what better to cook than sweet corn chowder. Sweet corn is a natural hit with my children because it’s sweet and it’s got a bright cheerful colour to it as well. In addition, it’s rich in vitamins, minerals and fibre, therefore it’s highly nutritional.

To prepare the sweet corn chowder here’s what is needed –
(for the soup)
500gms of frozen sweet corn kernels
1 clove of garlic
2-3 stalks of spring onion (moderate the amount to your preference)
1 tbsp of semolina
Shredded cooked chicken breast meat (optional)
1 Litre of chicken stock (I mixed 2 tbsp of concentrated chicken stock essence with 1 litre of water)
(for the tortilla chips)
1 pack of original flavor tortilla chips
Grated cheddar or parmesan cheese (for topping)
The process of making this soup cannot be any easier.
1) Place sweet corn kernels, clove of garlic, spring onions and 1tbsp of semolina into the food processor
2) Give the mixture a few blitz pulsing in between till you get a smooth paste
3) Place the blended sweet corn mixture into a soup pot add in 1 litre of chicken stock and bring the mixture to a boil
4) Add pepper and salt to taste
5) Preheat oven to 200C
6) Pour out the tortilla chips onto a baking tray and top it with grated cheese; place the tray into the oven and grill till cheese is melted
Serve the soup with shredded chicken meat and garnish with some chopped spring onions. Dip the soup with tortilla chips and it’s a meal on its own!
