My Dinner Under One Hour – Flavoured Rice


Preparing daily dinner has always been a challenge especially when I have 2 young kids to care for and the multiple other housework and responsibilities to shoulder. For dinner, I love to prepare something simple yet nutritious; best if the dinner can be done under one hour 🙂 Flavoured rice is one of the easiest to prepare. Here’s one flavoured rice I enjoy making.

200gms minced chicken meat
2 eggs (whisked and fried into omelette)
1 clove garlic (minced)
2 shallots (minced)
2-3 tsp  Olive Vegetables
2 spoonfuls chicken powder
2 cups of cooked rice

Marinade (for minced chicken)
1 tsp light soya sauce
a dash of pepper
1 tsp corn flour

Roasted Cashew Nuts (1 small pack)
Pork Floss (amount according to your preference)
Red cut chilli & parsley

1) Cook rice in rice cooker
2) Marinate minced chicken for 10mins
3) Fry eggs into omelette and cut into strips
4) Heat up a wok or HappyCall Jumbo Pan with 1 tbsp oil
5) Fry minced shallot and garlic till fragrant
6) Add Olive Vegetable and fry for another min
7) Add minced chicken and fry till cooked
8) Pour in the rice and stir fry till well combined
9) Add chicken powder and mix well
10) Dish out the rice and top with preferred condiment
11) Serve
