Banana Raisin Cake

Ingredients:
- 200g self-raising flour
- ¼ tsp Baking powder
- 180 g caster sugar
- 225 g unsalted butter
- 5 eggs
- 1 tsp vanilla essence
- 2 ripe banana (mashed)
- 1/2 banana (thinly sliced ard 3mm thick)
- 1/2 cup raisin
Methods:
- Sieve self raising flour and baking powder, keep aside.
- Electric mixer on medium speed mix butter & sugar till creamy, switch to high speed, add eggs one at a time till fully mixed
- Add vanilla essence, add flour slowly in batches till well combined, still on high speed, add mashed banana and let it mix a while till well combined
- Stop the mixer, take out the mixing bowl, gently fold in raisins
- Grease HCP with vegetable oil and pour in batter. Gently spread the top so it’s flat and even. Then arrange banana slices on the top of batter
- Close HCP on medium low heat baked for 20mins, shift HCP side to side, Then flip and baked for 5 mins, shift HCP side to side so it create an even brown top and the banana slices are brown.
(Traditional Oven: Preheat 180 degree, 30 – 45 mins)
(Steaming method – do not add baking powder and no banana slices on top. Boil water, put in cake batter in a tin, steam around 40 mins on low heat)
Done and serve!
