Banana Walnut Chocolate Chip Muffins

Ingredients

3/4 cup sugar
1/2 cup vegetable oil
3/4 cup milk
2 eggs lightly beaten
1 3/4 cup plain flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon allspice
2 medium-sized ripe bananas (mashed)
1/2 cup mini chocolate chips
1/2 cup chopped walnuts

Method

Preheat oven at 180 degrees
Line a 12 cup muffin tin with paper liners
Using a whisk, mix the sugar and oil in a bowl
Add eggs in 2 parts, mix into mixture each time
Add in bananas
Set wet mixture aside
In another bowl, sift flour, salt, baking soda and powder, spices
Add flour mixture to wet mixture alternating with the milk
Fold in the chocolate chips and walnuts
Bake for around 18-20 mins or until skewer comes out clean

Note :
Do not over mix the muffin mixture. For a good airy muffin lumps are good for it creates air pockets around it. 10 to 12 strokes are quite sufficient when mixing.
