Black Cod in Miso Sauce

Who would have imagine this simple dish could turn out superbly delicious! The buttery texture of the cod combined with the mildly salty and sweet taste of the miso marinade was simply match made in heaven! :) You've got to try it to believe it!

300gms Black Cod Fillet (thoroughly cleaned and patted dry)

1/2 tbsp Miso Paste
2 tsp Sugar
2 tsp Sake
2 tsp Mirin
1 tsp soya sauce

1) Mix all the ingredients for the marinade together till the miso paste is smooth (no lumps)
2) Marinate the Cod Fish for 30mins (best overnight)
3) Preheat oven at 180C
4) Prepare baking tray with baking paper or aluminium foil
5) Bake Cod Fish for 30mins (or surface is nicely brown)
6) Serve as a side dish with steamed rice
