Braised Chicken With Mushrooms


Enough for 4 people


1/2 Chicken (cut into pcs)
8 pcs fresh mushrooms
2 thumb size ginger
3 cloves garlic (smashed and flatten once with skin intact)
3 pcs star anise
1 pc cinnamon stick (about 5-6cm)
3 covers full chinese cooking wine (use the wine bottle cover)
1 tablespoon oyster sauce
2 tablespoons dark soy sauce
1 tablespoon light soy sauce
1 tablespoon gula melaka
Sprinkle white pepper
Spring onions to garnish


1. Heat up pot on high flame
2. Add ginger, garlic, star anise, cinnamon stick and chicken pcs (stir and cover 2 mins)
3. Add chinese wine, oyster, light, dark soy sauce and white pepper (stir and cover 5 mins)
4. Add gula melaka, mushrooms, add a little water if required, stir through and cover for about 5 mins (lower flame)
5. Turn off fire and leave covered till ready to serve.
6. Garnish with spring onions

    • You most definitely can Caroline! I would braise it longer for softer meat. You might then have to add more water along the way, if so, adjust the seasoning according to your taste. For eg, add a bit more gula melaka and the sauces etc. if required. Love Pork Belly! #fatdieme
