Chicken Briyani

Briyani rice with Ayam masak merah

Ayam Masak Merah
1 kg pack of mid wings
Rice Flour (approximately 4-6 tbsp – amount according to your need)
2 packs of As-Sufi Masak Merah Mix
2 cups of water

4 cloves garlic (peeled)
Ginger 1″ size (peeled)
Yellow Ginger 1″ size (peeled)
Salt to taste

1) Blend the ingredients for the marinade together
2) Marinate the chicken wings for about 30mins
3) Prepare a pan/pot of oil for frying
4) Dredge the wings into rice flour (you may use corn flour if you wish to)
5) Fry the wings till golden brown
6) Set it aside
7) Prepare a pot for the masak merah and heat up 1 tsp of oil
8) Add the Masak Merah Mix into the pot and fry the paste for about 5mins on medium low heat
9) Pour in the 2 cups of water and bring the mixture to a boil
10) You may add the chicken wings into the Masak Merah at this point or you may dish the Masak Merah onto a separate bowl (this way the chicken wings will remain crispy)

Briyani Rice
2 cups Basmati Rice (washed and drained)
1 big onion sliced thinly
1 cinnamon stick
1 star anise
5 cloves
4 cardamom
1.5 tbsp ghee
1/2 tsp salt (or according to your preference)
Saffron (you may also use food colouring to achieve the orange/yellow colouring on the rice)
Pandan Leaves (knotted)
Water for cooking the rice

1) Heat ghee in a pot and fry all the ingredients (except food colouring/Saffron and pandan leaves) till fragrant
2) Add uncooked rice into the pot and continue stir frying for another few minutes
3) Prepare the rice cooker and transfer the mixture into the rice cooker
4) Add sufficient water to cook the rice; place the knotted pandan leaves into the rice cooker
5) Soak the saffron in 1/4 cup hot water; once the rice is cooked, you may drizzle the water that’s used to soak the saffron into the rice to get the yellow hue. Mix the rice well and cover the pot.
6) Serve the briyani and chicken masak merah together with some achar (if you have) and top the rice with some sultanas if you fancy.
