Chicken Rice Hainanese Style

Ingredients (serves 2 adults and 2 children)

For chicken
1 Fresh Chicken (approximately 500gms-600gms)
1 Bulb of garlic; each clove lightly smashed with skin on
1 Piece of thumb size ginger; lightly smashed
2 Stalks of spring onion cut into 2 inches sections
2 tbsp Light Soya Sauce
1 tsp Hua Tiao/Shao Xing Wine
1 pot of boiling water (water level sufficient to cover entire chicken)
1 tbsp light soya sauce & few drops of sesame oil (this is to be drizzled on cooked chicken before serving)

For rice
Chicken Fat (optional)
1 Large shallot; minced
4 Cloves garlic; minced
2 Stalks of Lemon Grass (only the bottom portions)
1 Piece of thumb size ginger; lightly smashed
4 Pandan leaves; knotted
1/2 tsp salt
1 cup rice
2 cups of chicken stock (from water used to boil chicken)

For soup (optional)

1 Small Sugar Cabbage; sliced into thin slices
2 Fish Cakes; sliced

1) Boil a pot of water
2) Rub fresh chicken with salt all over, including the cavity (this will help to get rid of the chicken-y smell)
3) Rinse chicken thoroughly; stuff all the garlic, ginger and spring onion
4) Drizzle the soya sauce and chinese cooking wine into the cavity of the chicken
5) Once pot of water come to a rolling boil, turn the heat down to the lowest heat; place chicken breast side down
6) Poach chicken for 40mins
7) Prepare a big bowl of iced water; once chicken is cooked soak chicken into ice water
8) After 10mins lift chicken out and set it aside

1) Wash rice thoroughly; place into a rice pot
2) Get ready 2 cups of chicken stock
3) In a saucepan heat up 1 tsp oil fry chicken fat till fat turned brown (optional step)
4) Sauté onion, garlic and lemon grass till fragrant
5) Tip in rice into saucepan and fry for 1min; pour rice and all the aromatics into rice cooker
6) Add chicken stock and pandan leaves allow rice to cook

1) Bring left over stock in pot to a boil
2) Add shredded cabbage and let it simmer till vegetables are cooked
3) Before turning off heat, add in fish cake let mixture simmer further for 1-2mins
4) Lightly season it with light soya sauce (optional)

chicken rice 9Serve chicken and rice with cucumber slices and cherry tomatoes and store bought garlic chilli sauce.
