Cottage Pie

It's amazingly easy to make this one pot meal that everyone in the family could enjoy.

Ingredients
500gms Minced beef
200gms Mixed vege
1 large onion chopped
2 cloves garlic minced
1 beef cube (use chicken stock if you prefer)
Water (omit this if u r using chicken stock)

For mash potatoes
2 cloves garlic skin removed
1 pinch of salt
Water for boiling the potatoes (ensure the water level covers all the potatoes)
1tbsp butter
Milk (amount depends on how creamy you want the mash potatoes to be)Method For the Preparation of meat mixture
1. Fry onions till soften then add garlic
2. Add mixed vege and stir for 2-3mins
3. Add beef and stir fry till beef is cooked
4. Add water n beef cube
5. Alt n pepper to taste
6. Add a dash of thyme
7. Add 1tbsp of tomato paste or 2tbsp of pasta sauce (this is optional)
8. Let mixture come to a boil and simmer for 15-20mins then set aside

Method For the preparation of mash potatoes (you may boil the potatoes as you prepare the meat mixture)
1. Boil potatoes with garlic cloves till potatoes are softened
2. Drain out water add potatoes and garlic into a large mixing bowl
3. Add butter and milk and salt
4. Mash and if it’s too dry add some more milk till you get a creamy consistency

Assembling
Preheat oven at 200C
Add all the meat mixture onto a baking pan
Top with mash potatoes I added some cheese on top of the mash potatoes just to brown the top Bake for 20 mins or until the top of the mash potatoes become brown
