Ingredients

2 pcs mee suah
2 eggs, beaten
a handful of bean sprouts
2 cloves garlic, diced
some carrot, shredded
some cai sim
100g pork, sliced
some fish cakes (shredded)
some prawns (de-shelled)
soy sauce to taste

Prep and Cooking Instructions

1.  Deep fried mee suah in hot oil till golden brown. Dish and drain.

2.  Blanch fried mee suah in boiling water until soft. Dish and drain excess water.

3.  Heat 1 tbsp oil in wok. Stir fry garlic till fragrant. Add in beaten eggs. Stir fry eggs till set.

4.  Add in other ingredients, seasoning and stir fry until well mixed and cooked. Dish and serve hot.

    May I know what is the reason to first deep fry the mee suah and can u recommend which brand mee suah to buy, thanks for this recipe :)

    Hi Jean, according to Rita, the deep frying of mee suah will help prevent the noodles from breaking apart during the process of stir-frying.

    My personal preference is the FairPrice brand of mee suah as I find that it doesn’t clump together that badly as compared to the other brands that I’ve tried before.
