2 boneless chicken thighs (washed and pat dry thoroughly)
2 tbsp Mirin
1 tbsp Sake
1/2 tbsp Miso
1 tsp Light Soya Sauce
1 tbsp Sugar

1) Prepare the marinade sauce – Combine mirin, sake, miso, sugar & light soya sauce, stir till well incorporated
2) Coat the chicken thigh meat thoroughly with the marinade.
3) Leave the chicken thigh meat to be marinated for at least 3hrs
4) Preheat oven at 180C
5) Line a baking sheet with aluminium foil and parchment paper on top
6) Grill the chicken thigh meat 30mins skin side down first
7) After which, take the baking sheet out and flip the chicken thigh meat over with skin on top
8) Grill for another 20mins or till skin turns golden brown
9) Serve with rice! Oishi!
