Healthy Steamed Chicken In Flavourful Sauce

Ingredients
2 pcs Chicken Thigh Meat
4 pcs Chinese Cabbage (to line the dish)
1/2 Bittergourd
5 pcs Black Fungus
1 tube Egg Tofu (cut into pcs, fry & set aside)
Spring Onions for garnish
Marinate (A)
1 tsp ginger (grate for juice), retain the ginger residue
2 cloves garlic (mince, 1 part for marinating chicken / 1 part for sprinkling onto veg)
2 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp fish sauce
1 tbsp sesame oil
1 tbsp chinese cooking wine
1 tsp sugar
Method
1) Marinate the Chicken with (A), leave 15 mins
2) Line cabbage on the dish with bittergourd & black fungus
3) Sprinkle ginger residue & mince garlic on top of vegetables
4) Steam for 5 mins
5) Add the Chicken pieces & fried tofu, steam for 10 – 15 mins
6) Serve
