Homemade Sambal Chili Paste

Ingredients:
-20 dried chili-soak in water till soften, de-seed them if u want to decrease level of spiciness / can replace with 10 fresh chili + 10 dried chili
-10 small shallots-skinned
-1 whole bulb of garlic-skinned
-a small bulb of galangal-skinned n cut into small pieces
-half bulb of ginger flower-cut smaller pieces ,optional(i love e flavour of ginger flower in chili )
-a tablespoon of belachan-crushed in a bag and toasted till fragrance n powdery
-2-3 tablespoon of sugar
-half cup of cooking oil
-toasted silver fish/ikan bilis(optional)
Preparation:
-Blend soak dried chili,galangal,shallots,garlic,ginger flower in processor
-Heat oil in pan and add in paste and toasted belachan
-Lower fire and keep mixing and stirring to prevent burning
-Add in sugar
-Fry /stir till mixture become fragrant and chili paste turns into dark red,u may try out e taste…if too spicy u may add in more sugar
-Add in toasted dry silver fish n mix,cool on plate and keep in air tight/dry container in fridge for usage

Where can I find the belachan? How does it look like?
