Kueh Bangkit

300 grm tapioca flour
4-5 pandan leaves ( clean n wipe dry)
20 grm butter
1 egg yolk
120 grm icing sugar
120 ml coconut milk
1/4 tsp vanilla powder

1) Fry flour with pandan leaves cut into shorter portions for half an hour or more… Using low flame
2) Leave flour over night or a day aft frying, sift flour before using
3) Add vanilla powder to flour
4) Cream butter n icing sugar add To flour
5) Lightly beat yolk with coconut milk.
6) Gradually add in coconut n egg mixture n knead to get to workable dough
7) Roll with roller n use ur favourite cutter or kueh bangkit mold
8 ) Use side of hcp to bake in very low flame , cookie is done when e top dry n bottom browned

    wow…cool…but can check u mean cream butter and icing sugar? is it use wooden spoon and cream both together before adding to the flour???

      Yes, it should mean cream both together then add to the flour. A handheld mixer to do the creaming would be easier than a wooden spoon though.
