Simple Braised Pork (扣肉/卤肉)

It’s always easy to just whip up a bowl of hot rice and top it with this wonderful comfort food to make a meal. While it’s not exactly a very healthy choice, but the once in a while indulgence who can fault? So let’s see how this dish can be so easily done!

500gms Pork Belly

1 bulb head of garlic (peeled and lightly smashed)
3 stalks of spring onion (cut into 3 sections)
2 inch long ginger root (thinly sliced)
2 star anise
2 tbsp brown sugar
2 tsp dark soya sauce
5 tbsp light soya sauce
1/4tsp 5 spice powder
1 tbsp hua diao or shao xing wine
Water sufficient to cover all the ingredients

1) boil a pot of water and place the pork belly into it to blanch for 5 mins

2) lift out the pork after 5 mins, and set it aside to cool slightly before slicing

3) in a separate pot, heat up 1tbsp of cooking oil and add sugar to caramelise
4) once sugar has caramelised add the pork into the pot and stir to combine
5) add dark soya sauce and gently stir to coat the meat with the dark soya sauce
6) pour water into the pot and add all the remaining the ingredients

7) bring mixture to a boil then turn down heat to simmer for 40-50mins
8) once done serve the braised pork with rice or as a side dish
*Note: for variation, you may add ready made hard boiled egg or tofu towards the last 5mins of cooking
